mmm.... Apple pie....

Apple pie is a bit of work, but not hard to construct. Here's a recipe.... and it is super quick if you can get someone to prep the ingredients for you.

Crust:

2 1/2 cups white flour
2 tbsp. sugar
1/4 tsp. salt
1/2 cup melted
5 tbsp. cold vegetable shortening
8 tbsp. water

Mix all this together and knead it until it looks like it should. Separate 1/3 of the dough and set it aside. With the remainder, roll it out and put it in a pie pan. I like to spray the pie pan with nonstick spray just incase.

Filling:

2/3 cup sugar
1/4 cup all-purpose flour
1/2 teaspoon ground nutmeg
1 teaspoon ground cinnamon
Pinch of salt
10 apples, peeled and chopped
1/4 cup margarine mealted.

Preheat oven to 425. Mix all this stuff together and then put it in the pie pan. Then roll out the remaining dough and put it on top. Pinch the sides together and seal it all in. If you're having trouble, steal excess dough from other ends to seal it all off. The dough should be fairly malleable, so this should be no problem. Be sure to poke holes in the middle of the crust.... I make smiley faces.

Some people like to put alluminum foil over the crust.... that's effort. If you do it like I do, you can get this biznatch cooked in about 40 minutes or until the crust is golden brown. Stabbing the middle can determine if the middle's cooked enough. The apples should be mushy and the knife should go through no problem.

Tomorrow: my husband's favorite dish... after I took it over. Broccoli in garlic sauce. So easy, HE INVENTED IT.
